I want to say, I ran this for players a year ago with massive revisions. It was genuinely an amazing time and I greatly appreciate all the work you put into this.
Also the mouse zombies were such a great edition. I changed Ratonloft to be Bunnicula because it felt more appropriate!
How do you play the interior of the castle? The booklet shows 3 rooms with 3 items. Is it supposed to improvise the rest of the castle? Or is the castle just a cherry on top and most of the adventure is spent in the village and on the road to the castle?
It is meant to be improvised. Perhaps the players are invited to dinner with the Count, or perhaps they sneak in looking for the 3 objects rumored to help the defeat him from the villagers, dealer's choice.
